The process of jerking is a cooking style native to Jamaica. Meat is dry-rubbed then wet-marinated with a hot, spicy, flavorful spices. It is then slow cooked over fire (pimento wood), coal or grill. Some of the main ingredients of this culinary delight are, Scotch Bonnet Pepper, Pimento, Thyme, just to name a few.
